Leek Fritters

Leeks, a symbolic food in Sephardic custom on Rosh Hashanah are combined with potato and fresh herbs into flavoursome fritters, which are traditionally served at the New Year dinner. I like to accompany these tasty bites with a dill flavoured tzatziki (See recipe, Stella’s Sephardic Table, p47) or a warm tomato sauce (p148)
