Turkish-inspired aubergine rice pilaf is redolent with warming spices, fragrant with saffron and interspersed with succulent morsels of cooked aubergine. Topped with crunchy, toasted pine-nuts and fre dill, this pilaf makes a sumptuous accompaniment to roasts, grilled food or just delicious on its own with a salad.
