Over generations the Jews of Rhodes adapted the much loved Greek macaroni and meat bake ‘pastitio’ with its iconic cheese béchamel sauce. Our ancestor’s kosher version ‘makaron reynado’, combined macaroni with an aromatic meat and tomato sauce then baked with beaten eggs.
