Fried fish peshkado frito

The art of shallow frying fish dates back to medieval Spain and spread throughout the Sephardic communities in the east Mediterranean. Crisp fried fish fillets are a favourite of the Iberian Jews, especially on the Sabbath with one of the traditional tasty sauces, served with a tomato rice pilaf or potato chips. Sephardic Jews from Holland brought this dish to Britain – the iconic ‘Fish ‘n Chips’.
